Everybody is on their own journey on their own timeline. You really hit it on the head regarding learning through the process...but it's definitely still a challenging aspect for me. I too will hesitate to start a project that I don't have a clear idea of where it's headed, or one that I'm not sure I can execute. I'm trying to learn and really internalize the idea that everything I make, whether it turns out good or not, is a step towards better and better art, and it will spark new ideas along the way to help figure the puzzle out. that sounds like a book I need to read.
